Air fryer granola

Lately I have decided to step up my healthy eating regime. I caved and bought an air fryer the other day after hearing about how they are so versatile in preparing different kinds of food. Not only can you cook so much in an air fryer, it cuts your cooking time in half compared to a traditional oven, is healthier using very little to no oil and also saves a lot in terms of running costs. I love to have some granola for breakfast but most of the store bought varieties are either full of additives, sugar and other less desirable ingredients or if they happen to be healthier they can be expensive for a very small amount.


The idea came to me to try and make my own simple granola but using the air fryer instead of a traditional oven for the reasons mentioned above. The result was oh so good and oh so yummy! The recipe is simple and the granola is ready in no time at all around 15 mins to be exact. It felt so satisfying to be able to make and eat something that had been made by myself. The recipe is enough for two people although you can play with and adjust the amounts if you desire to make a big batch which I will do the next time and store in an air tight container.





Ingredients

2 and 1/2 cups gluten free organic rolled oats

1/4 cup coconut oil

1/4 cup maple syrup

1/4 cup almond butter

1/2 tsp ground cinnamon

1/2 tsp ground nutmeg

A pinch of salt ( I used Himalayan pink salt)



Method


Mix the coconut oil, maple syrup, and almond butter in a bowl

In a separate large bowl mix the dry ingredients oats, cinnamon and nutmeg

Combine the wet and dry ingredients and add a pinch of salt

Preheat your air fryer if you have this function on it

Line the the air fryer tray with parchment paper or use a protective parchment liner

Add the mix to the air fryer and cook at 180 c for 5 minutes

After 5 minutes shake the granola in the tray to ensure that it cooks evenly

Cook for a further 5 mins (careful as the air fryer tends to cook fast and you don’t want the granola to burn)

Once cooked allow the granola to cool for a further five minutes before eating

It is nice paired with some plant milk of your choice, yoghurt and fruit toppings if you so wish.
